The William Frederick Shiraz, our pinnacle wine, is made in strictly limited release numbers. We are delighted to deliver wine making excellence, most suited to your fine wine collection.
Named in honour of Trevor’s late father, William Frederick Harch (1910 – 1976), this cool climate single vineyard Eden Valley Shiraz is the pride of our vineyard – seamless and delicately crafted from only our finest parcels of fruit. Our single vineyard estate grown grapes are hand picked from 90 year old vines. This wine has approximately 20 days on skins and is then matured in brand new French oak for 20 months before being bottled.
Our limited release 2015 William Frederick Shiraz will be known affectionately for years to come, as a ‘sleeper’. In 2015, Mother Nature blessed us with a cool January and a milder than usual February, allowing excellent fruit set to follow. These favourable growing conditions started writing the story of elegant structure, long before harvest.
Upon release, two hours in a decanter will fully open up our ‘shy at first’ William Frederick, allowing expression of its true nature. However our Eden Valley Shiraz will continue to develop further complexity across the next decade.
First to appear are aromas of plum, cedar and cocoa, followed by dates, and then a walk in the black forest…
Beneath the soft ripe blackberry fruit ingress, looms a more serious set of savoury notes; olives, gunpowder tea and Eden Valley white pepper spice.
There is an emerging dark chocolate element, seemingly bound to the tannins, creating an exquisite finish.
